A celebration of maple sugar season

Maple taffy tasting with La Petite Cabane à sucre de Québec
March 17, 11 a.m. to 3 p.m.
March 18 and 19, 1 p.m. to 5 p.m.

Limited quantity, first come, first served

Meet the team from La Petite Cabane à sucre de Québec, who will introduce you to the delights of all things maple and show you the steps in sugar production, from tapping trees to making taffy on snow. Sample some taffy between skating sessions!

Carole and Mario Fortier are passionate professional maple producers, carrying on a rich family tradition in which maple syrup takes centre stage. They have built a close-knit team of people who share their passion for maple products and their desire to tell a large international clientele all about what makes Quebec’s terroir so special.

Maple sugar sculpture demonstration with chef Patrick Bouilly
March 17, 11 a.m. to 3 p.m.
March 18 and 19, 1 p.m. to 5 p.m.

Come admire a series of maple sugar sculptures by acclaimed pastry chef Patrick Bouilly and his students from the Institut de tourisme et d’hôtellerie du Québec (ITHQ). Watch them as they skilfully carve maple sugar into flowers, leaves and ribbons that slowly become edible sculptures.

A large piece, inspired by maple and spring, will take shape before your eyes: an impressive sculpture more than a metre tall. At the end of the experience, the public will be invited to devour the sweet carving!

Patrick Bouilly is an acclaimed pastry chef and a professor at the Institut de tourisme et d'hôtellerie du Québec (ITHQ). For several years, he was the pastry chef at the ITHQ’s hotel. Mr. Bouilly studied pastry, confectionery, chocolate and ice cream in Paris. He has more than 37 years of experience in France and, primarily, Canada. Mr. Bouilly was a member of the Canadian team for the finals of the Pastry World Cup in Lyon in January 2023, with 20 countries in competition. His team took tenth place and the award for eco-responsibility.
