The Tranquille sugar shack invites everyone who has a sweet tooth to celebrate maple sugar season in the Quartier des Spectacles! Come and rediscover maple syrup traditions with an artistic flair during this free culinary event in Esplanade Tranquille.

Meet the Sucrier Urbain team, who will introduce you to the delights of maple syrup and the stages of its transformation from sap to taffy on snow. You can even taste taffy between two skating sessions.

You can also admire a series of maple sugar sculptures made by renowned pastry chef Patrick Bouilly and his students from the Institut de tourisme et d'hôtellerie du Québec (ITHQ). See firsthand how maple sugar is delicately worked into flowers, leaves and ribbons, which gradually take the form of sculptures to be savored.

Sucrier Urbain

The Sucrier Urbain was created by David Lessard to share his passion for maple, the forest and the sweet taste of maple syrup. A maple producer in the Beauce region whose sugarbush has 2,000 tapped trees, Lessard makes his syrup using traditional methods. The goal of the Sucrier Urbain is to reinvent the sugar shack experience and share the true value of the maple syrup tradition with city-dwellers.

Chef Patrick Bouilly

Patrick Bouilly is a renowned pastry chef and teacher at the Institut de tourisme et d'hôtellerie du Québec (ITHQ). For several years, he also worked as the pastry chef at the ITHQ Hotel. Bouilly studied pastry, confectionery, chocolate and ice cream in Paris. He has more than 30 years of experience in both France and Canada. Restaurateurs and artisans often consult him to create innovative desserts
